Salad and Egg sandwich

This is my personal favorite, easy to make and totally healthy!Image

 

Ingredients:

One green pepper/ capsicum

one onion

one tomato

1 or 2 boiled egg(s) with or without the yolk

1tbsp cheese spread 

salt and pepper to taste

Method:

Chop the veggies. Then on a non-stick pan, roast the onions and peppers for a while till they are slightly soft (make sure they dont turn all black). In a bowl mix the veggies, eggs and salt-pepper, toast your bread, spread it over, munch away to glory! 

I love it! No oil, only cheese (good fats). You can also add lettuce leaves to it and spice it up a lil more with some oregano! 😉
