Pot roast chicken and veggies

Talk about eating healthy, this one’s full nutritious (Protein+Vitamins+Anti-oxidants, a little carbs on the side and who knows what else), easy and yummy too!

To marinate the chicken:

Wrap up the chicken with a tablespoon vinegar, 1tsp salt and 1tsp black pepper powder and set it aside for two hours.

Ingredients:

2 bell peppers, yellow and red respectively, cut into thin long pieces

2 carrots julienned

some french beans cut into 1 inch pieces

2 potatoes, wedged

7-8 cloves of garlic crushed

3-4 chillies thinly sliced\

1 tbsp oil

1tsp soya sauce

1tbsp tomato ketchup

salt and pepper to taste

 

Method:

In a microwave save ceramic/ heat resistant bowl/ pot add the marinated chicken, potatoes, garlic and chillies, pour the oil, mix it and place it inside your microwave, combi mode: micro+convection, 230 degrees and cook it for 30 minutes.

Take the bowl out, check for uncooked sides and roll them over, add all the other veggies, soya sauce and ketchup, stir the contents and  cook in the same mode for another 1 hour.

Once its done, serve it up with toasts or eat it simply! add salt and pepper according to your taste buds (you might not need it as well, cos the marinated chicken had et al).
